In the end of summer/beginning of fall I usually buy a lot of eggplants from the market and bake them in the stove or much better on the grill (if the weather is good and it allows me to go outside). A make little packages and put them in the freezer so I can use them over the winter. And if I do not have time to do this I know that my mother will make some extra eggplant packages for me :)
I just love making a simple salad made only with mashed eggplants onion a little olive oil and some salt…simple and very very tasteful.
But know I found another interesting and delicious eggplant recipe: instead of onion, combine them with garlic and crumbled feta. The rest ingredients are the same. The special taste of the eggplant works wonderful with the salty feta cheese and the taste of garlic.
