Rhubarb Custard Tea Cake


This cake is absolutely perfect for spring or summer time. Is a light day cake that you can easily enjoy, as the title says, with a good cup of tea.
Unfortunately, I have to wait another 6 months to make it since we are in the middle of fall.
I love rhubarb, is so refreshing and tastes like summer :) and I thinks it works wonderful with a simple vanilla flavored cake.
Also is a very healthy plant as it is rich in vitamins A,B,C and has lots of fibers like calcium, iron, phosphor or potassium. So besides is interesting and fresh taste, much more reasons to eat rhubarb!
