This is an interesting pasta recipe: pasta with pumpkin and cheese. Sound like a challenging combination and it really is: the sweetness of the pumpkin goes wonderful together with the saltiness of the cheese.
You will need (for 4 servings):
- 400 g of pasta (I used tagliatelle but you can use whatever you like)
- 400 g pumpkin core
- 50 ml olive oil
- 1 onion
- 4 cloves of garlic
- 200 g cheese
- 1 teaspoon sugar
- 2 tablespoon of fresh chopped parsley
- salt and pepper
First, chop the garlic and the onion, then grate the pumpkin.
Now that you prepared the base ingredients, in a frying pan were you put a little olive oil, cook the onion for about 3-4 minutes and then add the garlic. After other 1-2 minutes add the pumpkin and mix everything together very well. Add the sugar, salt and pepper. Cook this mi for 2-3 minutes then add a glass of water and boil the composition for about 10-12 minutes.
After these 10-12 minutes passed, add the parsley and half of the cheese, mix well and stop the heat source.
Meanwhile, boil the pasta as indicated on the pack.
After the pasta are cooked, put them in a bowl and pour on top of them the pumpkin sauce. Sprinkle over the pasta the remained cheese.
Also, optional you can sprinkle on top of the dish some crushed peanuts or walnuts or some pumpkin seeds.
