    Who said cupcakes should only be served as a dessert with chocolate, vanilla and some other sweet ingredients? Well, they make for a perfect appetizer as well if you combine the ingredients in the right way.
    Take for example, these chicken pot pie cupcakes, presented by Heather: many of us are a sucker for chicken pot pie as this is a real comfort food, and the fact that with only few ingredients and few time you can make an amazing appetizer makes you wanna try them even more.

    The best way to make a pasta sauce is to make it yourself with fresh ingredients you definitely have at home or can find in every store. It is much more healthier and you will prepare a much more tasty sauce.
    On menumusings website I found this simple and great idea of how to prepare some pasta with chicken cooked in a tomato basil sauce. Tomato and basil works wonderful together and I believe basil is also a key ingredient when cooking pasta because it this combination taste so good.
    The recipe is wonderful due to its simplicity and great taste and you will be able to make it with just a few healthy ingredients:

    • chicken breasts
    • fresh chopped tomatoes
    • fresh basil and minced garlic

Grilled vegetables with yogurt sauce

This is a healthy lunch/dinner idea that will be ready in no more then 15 minutes.

You will need:

  • any vegetables you like :)
  • I used: an eggplant, onion, tomatoes and zucchini
  • olive oil
  • salt

For the sauce:

  • ½ cup low fat yogurt
  • 1 cucumber – take the seeds out and grate it then squeeze to take the water out
  • 1 crushed garlic clove
  • 1 teaspoon olive oil
  • juice from ½ lemon
  • salt and pepper
  • basil (optional)

Instructions:

  1. Cut the eggplant and zucchini in strips and the onions and tomatoes in bolts.
  2. With a brush, grease with olive oil the vegetables slices you will put on the grill. For the tomatoes and onions also add salt.
  3. When the grill is hot place the vegetables and grease them as well on the top side.
  4. Leave them for 2-3 minutes then turn them on the other side and grill for another 2 minutes.
  5. The sauce preparation is simple: mix in a bowl or in the blander all the ingredients.

Cobb salad

I just love Cobb salad salad. The fist time I saw it in a cooking book I fell in love with its colors.
And even though I am not a big fan of American cuisine (and to be honest I do not know much American dishes except for stakes, Buffalo wings or ribs) the Cobb salad my favorite American dish :)

There are different variants for this salad and this one is made with avocado and chicken breast, bacon and blue cheese :)

You will need:

  • 2 avocado
  • 300 g chicken breast
  • 2 tomatoes
  • 150 g bacon
  • 150 g blue cheese
  • ½ bunch parsley
  • 3 hard boiled eggs
  • 2 tablespoons chopped green onion
  • 1 teaspoon Worcester sauce
  • 50 ml red whine vinegar
  • 1 teaspoon mustard
  • 1 clove of  garlic
  • 50 ml extra virgin olive oil
  • green salad
  • salt and black pepper

Instructions:

  1. You can either fry the chicken breast or boil it. As well if you have some leftovers from a roast chicken you may use them as well.
  2. Boil the eggs enough so the yolk will be hard and they will be easy to cut.
  3. In a frying pan, with no oil added, fry the bacon until you obtain a nice color.
  4. Cut in cubs the avocado, tomatoes. Also chop the green onion and the parsley and mix this two.
  5. Cut the cheese, also in little cubs. Keep about 30 g uncut. In the same why cut the bacon, eggs and chicken.
  6. For the sauce: crush the kept blue cheese, add the grated garlic clove and the mustard and then gently pour the olive oil. Stir continuously. Add the Worcester sauce, vinegar, salt and pepper.
  7. On a try  place a bed made of green salad. On top of the salad place equal rows of the above ingredients so you can create a pleasant visual contrast, then sprinkle 3-4 tablespoons of sauce on top of everything.

What I love most about the mac and cheese is its amazing taste and simplicity. Every time I eat mac and cheese I instantly think of my childhood, maybe this is one of the reason I love them so much.
As you, I have tried lots of mac and cheese recipe but this one is so far my favorite one: the subtle taste of rosemary is just wonderful.

Lentil and Spinach Soup

Pure health in a plate :)
This soup full of proteins and vitamins and is easy to make, even though you might think is will take some time, due to the fact that you have to let the lentil soak.

Ingredients:

  • 1 cup lentil
  • 1 bay leaf
  • 5 cups water
  • 1 onion – finely chopped
  • 1 garlic clove – finely chopped
  • 2 teaspoons vegetable oil
  • 1 cup tomato paste
  • 200 g fresh chopped spinach
  • sea salt and black pepper

Instructions:

  1. In a saucepan, boil, over medium heat, for about 40 minutes the lentil with water bay leaf, salt and pepper. Stir from time to time.
  2. Meanwhile, in a frying pan, heat the oil and saute the onion with the garlic. Add the spinach, and over low heat, cook everything for about 5 minutes. Cover the pan with a lid.
  3. Put the spinach and the tomato paste  in the sauce pan and leave the soup to boil for another 10 minutes.

Before you serve the soup, take out the bay leave.
You can serve it with toasted whole grain bread.

You can try this lemon ricotta poppy seed pancakes, an interesting and full of flavors combination. Quite a special one in my opinion.

Red Lentil Soup

The lentil is a perfect ingredient for a healthy and highly nutritional  meal due to the multiple benefits of lentil, like a high content of protein, iron or dietary fiber.

In the last few years the lentil soup has become well known all around the world and more and more people, even though they are not a vegetarian choose to eat this miracle vegetable.

You will need:

  • 2 cups red lentil
  • 2 carrots
  • 1 onion
  • 2 l chicken soup or beef/vegetable stock
  • 3 tablespoons extra virgin olive oil
  • 2 lemons
  • 2 yolks
  • 2 tablespoons tomato paste
  • 2 tablespoons dry mint
  • salt and pepper

Instructions:

  1. Peal the onion and the carrots and then grate them or chop very finely.
  2. Wash the red lentil around 3 times, with cold water.
  3. Heat the olive oil in the pan and saute the carrots and onion for about 1-2 minutes, stirring continuously. Add the tomato paste and mix it with the carrots and onion.
  4. Add the red lentil and the stock, cover the pan and boil everything for about 35-40 minutes, over medium heat, until the lentil is well boiled.
  5. In a bowl combine the yolks with a little stock or water and after you take the pan away from the heating source add little by little the yolks, stirring gently.
  6. Add salt and pepper

You can either serve it as it is or you can blend it and serve it as a cream soup.
Either way serve it with dry mint sprinkled on top and lemon aside.

Is a rustic and tasty recipe that makes my think of the way my grandmother used to cook for me and my cousins. Something made fast with that she had in her fridge and that was unbelievable delicious. Each time I make this my beautiful childhood and my wonderful grandma come into my mind.
