    The best way to make a pasta sauce is to make it yourself with fresh ingredients you definitely have at home or can find in every store. It is much more healthier and you will prepare a much more tasty sauce.
    On menumusings website I found this simple and great idea of how to prepare some pasta with chicken cooked in a tomato basil sauce. Tomato and basil works wonderful together and I believe basil is also a key ingredient when cooking pasta because it this combination taste so good.
    The recipe is wonderful due to its simplicity and great taste and you will be able to make it with just a few healthy ingredients:

    • chicken breasts
    • fresh chopped tomatoes
    • fresh basil and minced garlic
    • extra virgin olive oil
    • butter
    • Parmesan cheese
    • salt and pepper

The Christmas is already gone, but we still have New Year to celebrate. After we have enjoyed family lunches and dinners with our beloved families, we choose to celebrate New Year’s Eve with our friends and really party :).
For this kind of parties, were we sing, dance, drink, etc., is not so indicated to serve streaks, soaps, well complicated dishes, but simple ones, yet delicious and interesting: stack food and bites are the most appropriated chicken and bacon bites glazed with a wonderful honey marinade will be just perfect.

Crepes Suzette

The famous French pancakes, Crepes Suzette, make the perfect weekend late breakfast. Serve it together with your love one and it will be even more tasty :)

Fist you need to prepare the crepes. For them you will need:

  • 100 ml milk
  • 1 egg
  • 1 teaspoon oil
  • 50 ml water
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 50 gr white flour
  • 1 cub butter

You need to beat the egg, then gently pour the milk and water, stirring continuously. Then add the vanilla essence, salt and oil and at the end at once the flour, stirring vigorously.
Heat a pancake pan, melt the butter and then begin to cook one by one the crepes – around 3 minutes each one.

After you are done with the classic crepes you can continue with the preparation of Crepes Suzette.

You will need:

  • 6-8 crepes previously prepared
  • 50 g powdered sugar
  • 125 g butter
  • 1 tablespoons brown sugar
  • 1 tablespoons orange liqueur
  • 1 orange
  • 50 ml cognac
  • ½ lemon

Preparation:

  1. Fold the crepes into 4 and leave them aside until you will need them.
  2. In a blender, mix the grated orange zest, butter and powdered sugar. Also prepare the orange juice.
  3. In a frying pan, add the previously mixed butter and melt it for 2 minutes. Pass ½ lemon through the pan and take it out, then add the orange juice and boil for 1 minute.
  4. Now is time to add the crepes in the sauce, one by one. When all the crepes are in the frying pan sprinkle brown sugar on top of them.
  5. Now is time to flambe: add the liqueur and cognac in the frying pan and light it with a match. Sake the pan to evenly distribute the alcohol through.
  6. Serve them hot.

Homemade Egg Noodles

We can find in any cookbook and any cooking blog recipes made with noodles.
Me as well have been posting about soups or other dishes made with noodles. Is better to do them yourself than to buy a package of noddles.
The homemade noodles remind me of childhood and is like I can see my kitchen table filled with noodles prepared by my mom or grandma. And they definitely taste different – better :)

My mother has taught me how to do them and I will share with you the recipe.

You will need:

  • 700 g white flour (or you can use whole grain flour if you want to do whole grain noddles)
  • 3 eggs
  • 1 teaspoon salt
  • water or olive oil

Instructions:

  1. In a bowl put 600 g flour and in the middle of the flour, where you have made a hallow, pour the 3 eggs and on top of them the salt. Leave them for a few minutes until you begin to mix.
  2. Add some water/olive oil- fill half of eggshell with water for 3 times and then with a fork begin to stir gradually incorporating the flour.
  3. Continue knead the dough with your hands until it will not be sticky anymore. Cut the dough in 3 pieces and sprinkle flour on the table.
  4. With a paddle, stretch the dough piece until you obtain a a thin  dough sheet. To do this repeat the process 3-4 times and roll over on both sides the sheet few times.
  5. When you are done with all the pieces, and they have become thin dough sheets, cut them into strips, lengthwise. Leave them to dry of a little bit.
  6. Roll each one of the strip and cut them as thin as you want your noodles to be, and depending what dish you want to prepare with them.

Your are done! Easy right? :)

Pomegranate and bananas cake

This refreshing cake is perfect also as a dessert or as a breakfast/brunch – in both cased works wonderful with a cold glass of milk.

You will need:

  • seeds from one sweet pomegranate
  • ¾ cup sugar
  • 2 cups flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ¼ cup of corn/sunflower oil
  • 2 big bananas – puree
  • 1 egg
  • ½ cup milk
  • zest from one orange
  • minced almonds
  • almonds flakes for decoration

Instructions:

  1. Preheat the oven at 160°C.
  2. In a bowl, mix the sugar, salt, flour, baking powder combined with lemon juice and orange zest.
  3. In a different bowl beat the egg, add the banana puree, milk and oil and then pour this mixture over the flour. Mix everything until you obtain a smooth composition.
  4. Now is time to add the pomegranate seeds and the minced almonds.
  5. Coat with baking pepper two cake shapes and pour the cake composition in them. Then on top sprinkle some pomegranate seeds and some almonds flakes.
  6. Put the cake in the oven and bake it for 40-45 minutes.

Winter is the season of smoked soups – warm, filling and delicious. So let’s make one with vegetables and smoked pork.

Ingredients:

  • 3 carrots
  • 2 pieces of smoked pork leg
  • frozen peas
  • 2 bell peppers
  • 1 white onion
  • 1 bunch of green onion
  • 2 tablespoons rice
  • 1-2 tablespoons of tomato/pepper paste
  • 1 bunch of parsley and one of celery

Instructions:

  1. Boil the smoked pork in the pressure cooker until is is tender.
  2. Cut the vegetables into little pieces or if you prefer you can grate them.
  3. When the pork is cooked, in 2 tablespoons of olive oil saute the vegetables and then add some water from the pressure cooker and let them boil.
  4. When the vegetables are boiled, add the smoked pork (detached from the bones), 2 tablespoons washed rice and the pea.
  5. When the soup is almost done add two tablespoons of tomato or pepper paste and the chopped parsley and celery.
  6. You can sour it with juice  from spicy pickled peppers.

November is here – cold, rainy, lots of days you just want to stay indoors covered in a fluffy blanket reading a good book, enjoying a good glass of wine, a tea or a warm and comforting soup.

This cream of potato soup with bacon is perfect for these kind of days, pure comfort food.

Ingredients:

  • 500 g white potatoes
  • 1 onion
  • 150 g bacon – sliced
  • 3 garlic cloves
  • 1 carrot
  • 1 little parsnip root
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 20 g butter
  • 1 teaspoon tarragon
  • 1 bunch fresh parsley
  • sour cream
  • sea salt and black pepper

Instructions:

  1. Fry the bacon slices in butter and olive oil until they are golden brown and crispy.
  2. Take them out of the pan. In the same pan, without washing it, saute for 1-2 minutes the sliced onion and the minced garlic. Then add the other vegetables: potatoes, carrot and parsnip root, all cut in little cubes.
  3. After 5 minutes add 1 l hot water, the bay leaf, salt, pepper and tarragon and leave all to cook for 20 minutes (cover the pan with a lid).
  4. Take out the bay leave, add half of the bacon and blend all the composition until you obtain a smooth paste.
  5. When you serve this dish, in each bowl beside the soup add one soon of cream, 1 teaspoon of the remained fried bacon and fresh chopped parsley.

  • granulated garlic
  • 1 glass of wine
  • 1 lemon

  • fresh mint

Instructions:

  1. Slice the turkey breast and prepare them as schnitzels. Season them with salt, pepper, dried parsley, lemon, garlic, olive oil and little wine and leave them to marinate for at least 1 hour in your fridge.
  2. On top of each turkey schnitzels put one slice of bacon and one mint leaf.
  3. Bind with kitchen thread and you can either fry them or bake them, as you wish.
  4. Serve them with green beans as side dish, potatoes or rice.
