    Who said cupcakes should only be served as a dessert with chocolate, vanilla and some other sweet ingredients? Well, they make for a perfect appetizer as well if you combine the ingredients in the right way.
    Take for example, these chicken pot pie cupcakes, presented by Heather: many of us are a sucker for chicken pot pie as this is a real comfort food, and the fact that with only few ingredients and few time you can make an amazing appetizer makes you wanna try them even more.
    I have done them for New Year’s eve party and everyone enjoyed every bite of them! :D

    On menumusings website I found this simple and great idea of how to prepare some pasta with chicken cooked in a tomato basil sauce. Tomato and basil works wonderful together and I believe basil is also a key ingredient when cooking pasta because it this combination taste so good.
    The recipe is wonderful due to its simplicity and great taste and you will be able to make it with just a few healthy ingredients:

    • chicken breasts
    • fresh chopped tomatoes
    • fresh basil and minced garlic
    • extra virgin olive oil

A colorful and cute appetizer that makes you think about spring or summer.

You will need:

  • 1 chicken breast
  • 300 g broccoli
  • 4 eggs
  • 3 onions
  • 1 teaspoon baking powder
  • 3 tablespoon flour
  • 4 tablespoons of cream
  • salt and pepper

Instructions:

  1. Preheat the oven at 180°C.
  2. Cut the chicken breast in cubs and saute it with the chopped onion.
  3. When the chicken has a beautiful brown color it is ready. Now you will need to mince the chicken with the onion in the mincing machine.
  4. Add the cream, salt and pepper.
  5. In salty water boil the broccoli for 5 minutes.
  6. Now is time to prepare the dough: in the food processor put the broccoli together with the  four, eggs, salt and baking powder. Mix until everything is homogenized.
  7. Coat a baking try with baking pepper. Pour the broccoli dough and bake it for about 15 minutes.
  8. After 15 minutes, take the try out and spread over the broccoli dough, the chicken composition.
  9. Roll the dough and bake it for another 10-15 minutes.

I like cake, I like spinach so why not try to combined them and make a delicious spinach cake, perfect to serve as an appetizers.
I did it and I enjoy every bite of it.

You will need:

  • 200 g cheese
  • 500 g spinach leaves
  • 150 g flour
  • 1 bunch fresh dill
  • 3 eggs
  • 130 ml warm milk
  • 80 ml oil
  • 1 teaspoon baking powder
  • 50 g butter
  • salt, pepper and oregano

Instructions:

  1. Preheat the oven.
  2. Wash the spinach and parboil it for a few minutes. Leave it to drain and then chop the leaves.
  3. In a frying pan, melt the butter and then saute for 3-4 minutes the spinach. Add salt and pepper and saute for 2 more minutes.
  4. In a bowl mix the flour with the baking powder. Add the eggs, one by one, the the oil little by little and the warm milk. Mix everything well until you obtain a dough.
  5. Chop the dill and add it in the bowl.
  6. Add the crumbled cheese and the spinach in the same bowl and then mix everything very very well.
  7. Pour the composition in a cake shape coated with baking pepper. Add on top of it oregano.
  8. Bake for about 60-70 minutes.

Simple and practical!

This is an example of a summery lunch were the veggies are the star.
Is simple to make, easy to take with you at the office and enjoy a healthy and full of flavor lunch.

You will need:

  • 1 sliced  zucchini (or eggplant)
  • 1 bunch asparagus
  • 1 tablespoon olive oil

For the Vinaigrette:

  • juice and zest from a lemon
  • 1 grated clove of garlic
  • 1 tablespoon olive oil
  • 1/4 cup chopped herbs (feel free to use whatever you like- mint, parley, oregano, basil, etc.)
  • 3 minced scallions
  • 1/4 chopped red chilli flakes
  • 1/2 tablespoon salt

Instructions:

  1. Preheat the grill.
  2. In a bowl, mix the zucchini slices with the asparagus and the olive oil and then grill for about 3 minutes on each side.
  3. Meanwhile, prepare the vinaigrette: combine all the above listed ingredients and when the veggies are ready, pour the vinaigrette on top of them.

Easy right? :)

You will need:

  • one French baguette
  • 2 tablespoons olive oil

A perfect classic English breakfast!
This is a wonderful way to wake-up your loved one and show him/her some morning love in a plate! :)

You will need:

  • 4 English muffin
  • 4 cheese slices
  • 4 eggs
  • 1 tablespoon extra virgin olive oil
  • 4 slices of bacon or prosciutto
  • ½ cup thinly sliced roasted red peppers

Instructions:

  1. Preheat the oven at 200°C.
  2. With a fork split the muffins in halves and place them in a try coated with baking sheet.
  3. Sprinkle olive oil over the muffins, place one slice of cheese on each muffin half and toast in the oven for about 8 minutes.
  4. Meanwhile fry the eggs, and when the muffins are ready, using a spatula, place the eggs over the cheese slice.
  5. On top of the eggs, place the roasted red peppers and cover everything with a slice of bacon or prosciutto.

  • ¼ cup of butter
  • Parmesan cheese
  • rosemary
  • salt and pepper
