    Who said cupcakes should only be served as a dessert with chocolate, vanilla and some other sweet ingredients? Well, they make for a perfect appetizer as well if you combine the ingredients in the right way.
    Take for example, these chicken pot pie cupcakes, presented by Heather: many of us are a sucker for chicken pot pie as this is a real comfort food, and the fact that with only few ingredients and few time you can make an amazing appetizer makes you wanna try them even more.

    The best way to make a pasta sauce is to make it yourself with fresh ingredients you definitely have at home or can find in every store. It is much more healthier and you will prepare a much more tasty sauce.
    On menumusings website I found this simple and great idea of how to prepare some pasta with chicken cooked in a tomato basil sauce. Tomato and basil works wonderful together and I believe basil is also a key ingredient when cooking pasta because it this combination taste so good.
    The recipe is wonderful due to its simplicity and great taste and you will be able to make it with just a few healthy ingredients:

    • chicken breasts
    • fresh chopped tomatoes
    • fresh basil and minced garlic
    • extra virgin olive oil
    • butter
    • Parmesan cheese
    • salt and pepper

Pesto is a classic Italian sauce served in most of the luxury restaurants all around the world.
The Genovese variant of this sauce is the must common nowadays, so this is the main reason I choose the share this variant of Pesto sauce.

You will need:

  • 2 cups basil leaves
  • 3 teaspoons pine nuts
  • 2 cloves of garlic
  • ¼ teaspoon salt
  • Parmesan
  • olive oil
  • tomatoes used as garnish

Indications:

  1. Put all the ingredients, except the olive oil, in a food processor or blender and mix well until you obtain a paste. Little by little add the olive oil until everything is very well incorporated.
  2. Serve with tomatoes as a garnish.

Every time I go to a store I see lots of cake rolls and I wonder why would someone buy a cake roll full of preservatives and chemicals when you can make one at home? It will look as elegant and pretty as a bought one and I do not understand why someone will prefer to buy one especially when the roll cake is incredible easy to make.

This Tiramisu cake roll has the authentic taste of tiramisu cake but looks much more tasty, just like a cake made in a pastry.
And it is also gluten free so one more reason to make your tiramisu cake roll at home! :)

Berry Streusel Tart

Each time I feel like making something sweet that does not require lots of time spend it the kitchen, I think of a fruit tart.
You can’t go wrong with a fruit tart as most of them are in the same time easy to make, refreshing, tasty and so good looking :)

This berry tart is all the above and because it is made with frozen berries you can make it any time. It will taste even better if you make it with fresh berries, but unfortunately we cannot always find fresh ones.

Tzatziki sauce

Because I’ve previously spoken about my Greek vacation and the traditional Greek Souvlaki which should always be served with looots of Tzatziki sauce, I though of sharing the recipe for this delicious sauce.

You will need:

  • 1 big cucumber or 3 small ones
  • 2  crushed cloves of garlic
  • 200 g Greek yogurt
  • 2-3 extra virgin olive oil
  • salt and black pepper
  • ½ tablespoons lemon juice
  • 2 tablespoons mint leaves – finely chopped
  • 3 tablespoons fresh parsley – finely chopped

Instructions:

  1. First peal, take the seeds out (optional) and grate the cucumber. Then squeeze it in your hand to drain it. Put it in a paper towel and place in the fridge to allow it to drain even more.
  2. In a bowl mix the rest of the ingredients.
  3. Take out of the fridge the cucumber and add it in the bowl then stir everything very well. Place it back in the fridge and allow the Tzatziki to cool before you serve it.

Enjoy!

Grilled Pork Souvlaki

This summer I spend 5 wonderful days in Greece, on Zakynthos island.
It was the perfect holiday: relaxing, did not care what time is or what day of the week, excellent food, and heavenly landscapes.
Of course we have tried all the traditional Greek dishes starting with seafood and fish dishes, continuing with moussaka, the refreshing Greek salad and of course the well known souvlaki and gyros. All of them were absolutely delicious and even though I do not usually eat pork I do not regret making an exception for the pork souvlaki (this is what the vacation are made for :D).
I found the below grilled pork souvlaki and reminded me of fabulous Greece.
I think I am going to try make them this weekend, with the delicious Tzatziki sauce, maybe it will help me believe I am back to Greece at least just for a little bit :)

Chocolate-Almond Brownies

Chocolate Almond brownies

It has been a while since I’ve post a brownie recipe and I think is time for a new one :)
I usually like my brownies made with dark chocolate, as dark as possible and no jam, raisins or nuts in the compositions, just a dense a chewy dark chocolate texture. But I like the idea of sprinkled nuts or almonds on top of the brownie.
The  salty almonds on top really balance the chocolate flavor of the cake. Add some vanilla extract and the resulted brownies is the real thing! :)

Gratin Potato with Rosemary

I saw that lots of those who visit my blog liked the potatoes dishes. Mainly, I think, this is because they are quite easy to make, tasty and most of them are vegan friendly.
This gratin potato dish is both tasty and vegan friendly :)

You will need:

  • 1 kg potatoes
  • 200 g black olives
  • 1 bunch green onion
  • a branch of thyme
  • 3-4 threads green rosemary
  • 6 tablespoons olive oil
  • 2 tablespoons apple vinegar
  • salt and pepper

Instructions:

  1. Wash and peal the potatoes, then boil them for about 10 minutes with a pinch of salt, at high heat. Cut them in halves.
  2. Cut the onion into rings. Also the olives need to be cut into slices.
  3. Wash the rosemary and thyme and rip them into large fragments.
  4. Coat a baking pan with the rosemary and thyme, then add a layer of potatoes, and then a layer of olives slices and onion rings.
  5. Mix the olive oil with vinegar, salt and pepper, and pour the mixture in the baking try, so that the potatoes are covered with it.
  6. Bake the potatoes for about 30-35 minutes as about 180°C (you need to preheat the oven), until they have a nice golden crust.

You also can add some thinly chopped clove of garlic on top of the potatoes before you bake them.

A wonderful sweet lunch or just a wonderful dessert, made with apples and lot of love :)

You will need (4 servings):

  • 8 apples
  • 2 tablespoons flour
  • 1 lemon
  • 4 tablespoons sugar
  • 100 ml white wine
  • cinnamon powder
  • salt

Instructions:

  1. Peal and cut in 4 the apples, then take out the middle of apples, where there are the seeds.
  2. In 1,5 l of water, boil the apples with the lemon zest for about 10 minutes.
  3. Place the boiled apples in the blander and mix them until you obtain a smooth paste.
  4.  Put the apple soup bake on the fire. Mix the flour with the white wine, and then add this composition in the apple soup when this begins to boil. Add the sugar and the salt and leave everything to boil for 10 minutes at low heat.
  5. When you serve the soup, add some lime juice and a little  cinnamon powder.

Bon appetite!
