A perfect dessert for a hot summer afternoon. What better way to cool then a tasty and creamy ice cream? :)
Melon ice cream is one of my favorite (beside vanilla flavor), and if it is homemade is a plus: much more healthy since you know what you put in it, with no chemicals or preservatives or some other unhealthy things like these, and the feeling to eat an ice cream made by yourself is much more fulfilling.
So make your melon ice cream with the following ingredients ( for 6 servings):
- 1 kg core of melon
- 200 ml milk
- 1oo g sugar (you can use up to 200 g but I prefer it less sweet)
- 200 g cream
- 4 yolk eggs
- 4 tablespoons of cognac
- 2 small packages of vanilla sugar
- 12 wafers
- mint leaves
First you need to cut into little cubs the core of the melon, put it in a bowl and sprinkle vanilla sugar on top of it.
In a different bowl, the yolks will be mixed with the sugar, and then little by little add the milk (heated in advance). Put this bowl on bain-marie and boil this mixture until the cream thickens.
After the cream is cold, mix it with the cream and the cognac.
The next step is to make a puree from the melon core. Perfect…now all you need is to pour the melon puree in yolks cream and mix well until everything is smooth.
If you have little ice cream individual shapes put the composition in them or if you don’t put it in a bowl or any other form that may fit you better and leave them/it in the freezer for minimum 3 hours.
You can serve it either in ice cream cups, or on a bed made of fruits or in a melon peel. Whatever you choose, add 1 or 2 wafers and some mint leaves.
