How do you fill about a juicy, tender roast beef covered into a tasty herb blend?

This is my first roast beef recipe posted on this blog and I think I could not have chosen a better one to start the roast/steak section in dinner category.
Like every good roast beef, the beef needs to be marinated with 24 hours before preparing the dish. This way the meet can “feed” with the wonderful flavor of the herb blend (made from thyme, shallot, parsley, mustard and olive oil). The beef will borrow all these flavor and the taste will be incredible.
It will take you about 2 hours to prepare this dish.
Don’t forget to let the beef to rest before serving, for about 20 minutes!
