This Grilled Asparagus and Feta Salad is very simple, and yet so tasty. Is the kind of salad that makes you believe you could give up meat so easy, since is so so delicious. Like any other salads, and most vegan dishes this will be ready in no more then 15 minutes.
You will need:
- ¼ cup feta cheese
- 1 bunch asparagus
- 1 tablespoon lemon juice and 1 tablespoon lemon zest
- 3 tablespoons olive oil
- ¼ tablespoon salt
- ¼ pepper
- First you need to prepare and cook the asparagus: trim the ends of the asparagus, toss it with 2 tablespoons of olive oil, salt and pepper and then cook it on the previously preheated grill for about 3-4 minutes, until they will have a nice brown color.
- Take the asparagus of the grill, and put it in the dish were you previously mixed it with olive oil, salt and pepper. After they cool cut every spread into ¼ and add the remaining olive oil, the crumbled feta cheese, lemon juice and lemon zest. Gently toss them.
- Season the dish with more lemon juice, salt and pepper and serve it at room temperature.
