Exotic soup

A few days ago I was in the mood for soup but I did not want a classic vegetable soup or chicken soup or something like this.
I felt like eating something special and I found my special soup recipe in this exotic soup with was ready in almost an hour.
The mix of ingredients is pretty wonderful: mango combined with rice, ginger, curry, coriander, rice other few spices really makes the flavor of this exotic soup unique and interesting!

You will need (for 4 servings):

  • 1 l of vegetable soup
  • 100 g rice
  • 2 mango fruits
  • 4 tablespoon of oil
  • 2 teaspoons of curry powder
  • 1/2 teaspoon pepper
  • 2 teaspoons grated ginger
  • 1/2 teaspoon nutmeg
  • 2 tablespoons coriander leaves
  • salt

Now that we know what we need to make the exotic soup, lets begin the preparation :)

First, pour the oil in a pan and add the grated ginger, the curry powder and the rice and cook them for no more then 3-4 minutes at medium heat. Ok, not that these are slowly cooked, pour over them the vegetable soup (only the liquid with no vegetable in it) and leave it to cook together with the spices for about 5 minutes. Hmmm…..do you feel the wonderful smell? :)
The next step involves preparing the mango fruits: wash and peel both of them. Cut one fruit into small cubs and add them into the soup. Leave them to boil for about 10 minutes.
The other mango fruits need to be cut into long strands which also will be added to your soup, but with 2-3 minutes before you will take it from the fire source.

Serve this hot with coriander leaves sprinkle on top!
