At my office we have a restaurant were we can eat daily, but they have mostly the same dishes every day so I am a little tired of eating the same thing over and over again. So at least twice a week I prefer to take with me something made at home and serve it as my office lunch :)
Today I had a beautiful and healthy endive salad with exotic fruits.
Here is the recipe:
You will need:
- 2 endive
- 1 mango
- 1 grapefruit
- 1 orange
- 50 g crusted peanuts
For the sauce:
- 3 tablespoons of extra-virgin olive oil
- 1/2 teaspoon of sweet paprika
- 1 tablespoon of minced parsley and dill
When I make a salad, first I prepare the sauce, put it in the fridge and continue with the salad preparation.
So let’s begin with the sauce: In a salad bowl I’ve put the olive oil, paprika, the minced parsley and dill and the salt and I’ve mix all of them very well with a whisk.
Next, I peeled the grapefruit and the orange and cut them in half. Half of them I squeezed and the I used the juice for the sauce. The other half I cut in small cubs and put them in the bowl.
Then I’ve peeled the mango and papaya, cut them in small cubs and put them in the same bowl as the rest of the ingredients
The next step: I washed the endives and detached about 10 leaves. I’ve chopped the endive core and put it in the bowl with the rest of the fruits.
I mixed all the ingredients from the salad bowl and filled the kept endive leaves with this composition.
You can garnish the little endive boats with olives or cherry tomatoes.
