Cream of mushroom soup

You will need:

  • 500 g mushrooms
  • 2 carrots
  • 2 big potatoes
  • 1 celery
  • 1 onion
  • 2 tablespoons oil
  • 2 tablespoons chopped parley
  • salt and pepper

You will need:

  1. Peal and cut the mushrooms into strips.
  2. Peal then cut the onion, celery, carrots and potatoes and boil them together with the mushrooms in 1,5 l of water, at medium heat for about 30 minutes.
  3. Put aside some of the mushrooms strips. Mix in the blender the rest of the mushrooms together with the other ingredients until you obtain a smooth paste.
  4. But the obtained composition together with the mushroom strips, oil, salt and pepper in a pan and boil them for about 10 minutes.
  5. Serve the mushroom soup hot with slices of toasted whole grain bread and sprinkle some parsley on top.
