Cherry soup

Hungarian Sour Cherry Soup 1

This is an interesting soup recipe: cherry soup.
I have made it mostly because I was curious how it will taste and I was quite surprised by the rich flavor and incredible taste.

So here is the recipe, maybe you will want to give it a try as well.
For me is a reinterpretation of the crumb dessert my grandma used to make me one I was a child :)

You will need (for 4 servings):

  • 500 g cherries
  • 5 tablespoons of sugar ( I used brown sugar)
  • 1 cinnamon stick
  • 2 tablespoons of starch
  • 250 ml milk
  • 3 tablespoons crumb
  • 1 egg

First, wash the cherries, remove the stems and take out the seeds. Now that the cherries are ready to be transform into a delicious dish, in a pan, mix them with 3 tablespoons of sugar, the cinnamon stick and 500 ml of water. Boil them for about 10 minutes, medium heat.

Meanwhile, mix the starch with 3-4 tablespoon of water, so the soup will thicken.

Separately, boil the milk with the remaining sugar. When the milk begins to boil, add the crumb slowly, stirring continuously. Boil the crumb for about 7-8 minutes at low heat.

After the crumb is boiled, take if of the stove and add the eggs, while the crumb is still very hot. Stir with the whisk, until everything is smooth.

The cold cherry soup will be divided into 4 plates and in each one put little crumb dumplings.

It looks really cute due to it’s red/pinkish color and the taste is incredible!
