Personally I did not found out about ceviche until recently when a friend of mine who was in Peru told me about it. She eat there this dish several times and convinced my to go out to a Mexican restaurant (we do not have Peru restaurant in our city :) ) and try Ceviche. And I must say I was impressed with it, even though I am sure that what she tasted in Peru was a million time better.
But what is ceviche? Is a seafood dish well known in Central and South America. This dish is not cooked with heat, actually is made from fresh raw fish. The fish is marinated in citrus juices, spices and chilli peppers.
I have read a lot about ceviche and I believe is time for homemade ceviche. :)
I found on Kevin Lynch website, that you can find also below, an interesting light Mexican style ceviche made with orange, lime, jalapeno and cilantro. Sounds really interesting and easy to make (will not take more then 20 minutes), so thank you Kevin :)
