Cauliflower souffle


This time I will not post a 100% vegan recipe, is an ova-lacto-vegetarian recipe :)
Due to the numerous cauliflower benefits(rich in vitamin C and folic acid) is a very healthy dinner idea. Is a good way to give you children vegetables, as the dish looks so fancy and if you serve it in a souffle form the cauliflower will not be seen :)
Also is an interesting alternative for those who are on a diet and are sick of eating grilled chicken breast and broccoli as a side dish or a salad, because the cauliflower has only 25-28 calories/100g and it contains the so called “negative calories”.

So, let’s begin cooking :D

You will need (for 6 servings):

  • 1 cauliflower (about 1 kg)
  • 4 eggs
  • 200 g grated cheese
  • 150 g cream
  • 1 tablespoon starch
  • 2 tablespoons oil
  • 2 tablespoons of chopped parsley and dill
  • salt

First you need to cook the cauliflower: break the cauliflower into little bouquets and steam them for about 10 minutes. (If you boil them the cauliflower will loose some of its benefits).
Separate the egg whites from the yolks. In the bowl were you put the yolks add the cream, starch, grated cheese and the salt – mix well until the composition is homogenized.
On top of the egg-whites sprinkle a pinch of salt and mix well with the mixer. After they are very well mixed slowly add the yolk sauce.
In a heat resistant vessel, which you have previously oiled, put the cauliflower, sprinkle the parsley and the dill in top and then pour the egg sauce on top. Be careful that everything is evenly distributed, and if not, use a spoon to do this.
Put the vessel in the oven for about 40 minutes, then serve it hot.

If you do not like cauliflower, then exactly in the same way you can prepare a broccoli souffle, or a cabbage souffle.  Fill free to use your imagination!
