Cauliflower and broccoli are two of a series of “nutrients stars” that should be found in any individual nutrition, either he/she is a child, a youngster or and adult.
For example the broccoli is an rich source of vitamins A and C, calcium, beta-carotene, iron, and more others elements that fight against cancer.
The cauliflower is rich in vitamin C, folic acid and phytochemicals.
Another important benefit of these two vegetables is the fact that they contain only 25-28 calories/100 g. They contain “negative calories” which make the human body to consume 3 times more calories to process this vegetables.
This been said, if I got your attention, let start cooking the cauliflower and broccoli salad with oranges.
You will need (for 4 servings):
- 500 g broccoli
- 1 red onion
- 500 g cauliflower
- 1 orange
- hulled pumpkin seeds
- coriander leaves
For the sauce:
- juice from 1 orange
- 1 teaspoon of honey
- 2 tablespoons of olive oil
- salt and pepper
First lets prepare the sauce: In a bowl pour all the ingredients presented above (orange juice, honey, olive oil, salt and pepper) and mix well until everything is homogenized.
Now that you are done with the sauce let continue with the salad preparation: Break the broccoli and the cauliflower into little bouquets, wash them with warm water and boil them for about 10 minutes, preferably steam them.
Peel the orange and cut it into bolts. Put them in the bowl were you prepared the sauce. Then fine slice the onion and put it in the same bowl.
After the broccoli and the cauliflower bouquets have cooled add them in the same bowl. Mix everything carefully and put the bowl in the fridge for about 30 minutes.
When you serve the salad, in each bowl, on top of the salad sprinkle hulled pumpkin seeds and coriander leaves. If you do not like coriander you can replace it with parsley.
